This thai inspired almond butter salad dressing has a fresh, zesty flavor from the lime and ginger, making it taste light and refreshing. The almond butter dressing is vegan and oil-free, making it a great salad dressing for weight loss. 

Serve the almond butter dressing over a bed of fresh romaine, carrots, cucumbers, red pepper, green onion, and tamari almonds. The salty crunch of tamari almonds pairs perfectly with the slightly sweet and zesty flavors of the thai almond butter salad dressing.

Ginger is a fantastic culinary herb for bloating and SIBO as it has antimicrobial properties. There are so many benefits of ginger! You can’t go wrong with adding immune-boosting ginger to flavor this thai inspired almond butter dressing. 

This vegan almond salad dressing has the addition of fresh turmeric, which has fantastic anti-inflammatory and liver-supporting properties, especially when served with liver cleansing vegetables full of phytonutrients and essential micronutrients. 

To make this thai salad a complete lunch bowl or dinner meal, you can add a side of grilled chicken or tofu with cooked rice, then use the thai almond dressing to drizzle over the top. Mmm, so good and such a great tasting healthy weight loss buddha bowl. So often, salad dressings are filled with high-calorie, inflammatory oils that are unhealthy and not good for weight loss. The thai inspired almond butter salad dressing can also be used as a dipping sauce for any of your favorite vegetable rice wraps. Switch up the vegetables in the salad to include broccoli and red cabbage for more liver-supportive foods. I promise that you will love eating your salads with this thai inspired almond butter dressing to pour on top!

Ingredients for the almond butter salad dressing 

  • 1/3 cup almond butter
  • 2 tbsp fresh lime juice
  • 1/2 clove garlic
  • 1 tbsp gluten-free tamari
  • 1 tbsp rice malt syrup
  • 3 tbsp water
  • 1 tbsp ginger
  • 1/2 tsp turmeric root (optional but recommended)

How to make the almond butter lime dressing

Place all ingredients into a blending jar and blend using an immersion blender.

Serve the almond butter salad dressing over a bed of fresh chopped romaine lettuce, sliced cucumber, sliced carrot, sliced red pepper, and diced green onion, then topped with some roasted tamari almonds. Yum!

  • immersion blender

Ingredients
  

  • ⅓ cup almond butter
  • 2 tbsp fresh lime juice
  • 1 tbsp tamari
  • 1 tbsp rice malt sweetener
  • 3 tbsp water
  • 1 tbsp fresh ginger root
  • ½ tsp turmeric root powder

Instructions
 

  • chop 1 tbsp fresh ginger and squeeze tbsp fresh lime juice into a mason jar.
  • Measure the remaining ingredients into a mason jar and blend using an immersion blender.

Notes

This almond butter dressing has a creamy yet slightly thick consistency. If stored in the fridge it becomes thicker so you can always add an extra tbsp or 2 of water to reach your desired consistency or to thin out the dressing.
