Homemade Cashew Yogurt – Vegan, Creamy & Easy

This homemade cashew yogurt is rich and creamy with a touch of sweetness. The vegan cashew yogurt recipe comes together in 5 minutes of prep time and contains six ingredients:

  • Water
  • Raw cashews
  • Rice malt syrup
  • Lemon juice
  • Vanilla extract
  • Two scoops Seeking Health Probiota Infant

The addition of lemon juice in this homemade cashew yogurt provides a touch of tang and zest similar to yogurt.

Vanilla extract is used to flavor the cashew yogurt slightly, and rice malt syrup yields the perfect sweetness. To keep this recipe refined sugar-free, you can substitute the rice malt syrup for this homemade date syrup that is refined sugar-free.

I had rice syrup in my cupboard to use, but any sweetener such as honey or maple syrup would also be suitable.

I added two Seeking Health’s Probiota Infant scoops to culture the homemade cashew yogurt. Probiota Infant comes in powder form and is a great probiotic for both toddlers and adults.

How to make cashew yogurt

Making cashew yogurt at home is super easy. You only need a high-speed blender and a glass jar to culture the cashew yogurt.

I recommend using a high-speed blender such as the Vitamix to yield a super smooth texture.

Place all the ingredients into a clean and sanitized blender and blend for 1.5 minutes or until you have an ultra smooth cashew yogurt.

Pour the blended cashew yogurt into a glass jar, secure with a lid, then let it sit on the counter at room temperature for 12-24 hours to culture. The longer you let the cashew yogurt ferment, the tangier it becomes and probiotic-rich.

I must say I liked the taste and texture of the homemade cashew yogurt as soon as it was blended, as the lemon juice adds the perfect tang!

Benefits of cashews

Cashews are an excellent source of monounsaturated fats, healthy carbohydrates, and protein. They are a good source of B vitamins for energy, including thiamine, riboflavin, niacin, B6, folate, and pantothenic acid.

Raw cashews are also high in vitamin k, iron, magnesium, phosphorus, potassium, sodium, zinc, copper, manganese, and selenium. 

This homemade cashew yogurt will help you meet your nutritional needs as they are nutrient-dense!

The cashew yogurt is great for anyone with a dairy intolerance as it is dairy free and full of healthy monounsaturated fats. Cashews are high in the essential omega-six fatty acids that need to be balanced with the omega-three fats, so be sure to eat foods high in omega-3 fats.

This cashew yogurt is naturally high in fat, so a little goes a long way.

I wanted to make a dairy-free yogurt as regular yogurt came up with moderate sensitivity on my bioresonance food sensitivity test. Coconut yogurt is another dairy-free yogurt alternative, but it is very high in saturated fats, which are the worst fats for insulin resistance, fatty liver, and weight gain.

I don’t do well with saturated fats, so I opted to try

making a cashew yogurt instead, and I am happy I did. It is super easy to make, nutritious, and yummy!

Ways to use this homemade cashew yogurt

Serve this cashew yogurt with liver cleansing berries such as frozen blueberries as a healthy breakfast or snack topped with homemade granola for a little crunch.

You can also top these healthy carrot pancakes or banana oat pancakes with this yogurt.

Add a scoop of yogurt to any smoothie, or try substituting the almonds with cashew yogurt in this strawberry smoothie that tastes like strawberry shortcake!

Homemade Cashew Yogurt – Creamy & Vegan

This vegan cashew yogurt is creamy with the perfect tang from lemon juice and sweet from rice malt syrup. It is the perfet dairy free yogurt alternatice to use in smoothies, with granola, fresh fruit or topped on healthy pancakes!

Equipment

  • 1 High speed blender

Ingredients
  

  • 1 cup raw cashews
  • ¾ cup water
  • 2 tbsp rice malt syrup
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 scoops Probiota Infant by Seeking Health

Instructions
 

  • Place all ingredients into a clean high speed blender and blend until smooth and creamy. I blended for a total of 1.5 minutes to yeild a super smooth texture.
  • Pur the blended cashew yogurt into a clean jar and let it sit at room temperature for 12 hours before placing in the fridge.
