Banana and Oat Pancakes with Homemade Blackberry Sauce

These banana and oat pancakes are served with an antioxidant-rich blackberry sauce and plain yogurt for a healthy breakfast that is high in protein, healthy carbs, and the essential omega 3 fats that are great for weight loss.

The banana oat pancakes are super easy to make with whole food ingredients that you are likely to already have in your pantry.

​The delicious yet easy banana oat pancakes are made with 6 ingredients:

  • mashed banana
  • ground oat
  • chia seeds
  • eggs 
  • baking soda 
  • dash of cinnamon

​It is seriously so easy to make these healthy banana oat pancakes that are full of fiber for gut health. The eggs and chia seeds are an excellent source of protein and fats to keep you feeling satiated and fueled for the day.

Eggs are also high in a nutrient called choline which is crucial for preventing fatty liver. Choline is also essential for optimizing bile flow from the gallbladder for optimal detox and weight loss.

I added in ground chia seeds for extra plant-based protein and the essential omega 3 fats that many people are deficient in. The addition of chia seeds makes these banana oat pancakes hearty with a whole meal texture that helps to bind the pancakes together.

My favorite way to eat these healthy banana oat pancakes is topped with plain yogurt and a homemade blackberry sauce that is seriously the best.

Traditional pancakes made out of refined white flour topped with Aunt Jemima’s syrup are the unhealthy refined carbs and sugar that is no Bueno!

You can rest assured that this homemade banana oat pancake recipe is made with healthy and nutritious whole foods that you and your family will love.

The following recipe for banana oat pancakes makes enough for 2 people. Either 4 small pancakes or 2 large pancakes.  Just double the recipe if you need to make more for a bigger family or kids!

These homemade pancakes are surprisingly filling though.

Banana and Oat Pancake Recipe with Homemade Blackberry Sauce

 

 

Ingredients for Banana Oat Pancake Recipe

1 medium banana
½ cup ground oats or oat flour
1 tbsp chia seeds ground
2 eggs
½ tsp baking soda
Dash of cinnamon to taste

Homemade Blackberry Sauce for Pancakes

1 cup frozen or fresh blackberries
1 tbsp chia seeds
1 tbsp rice syrup

How to make banana oatmeal pancakes

To make these banana oat pancakes start by mashing 1 banana with a fork then mix in 2 cracked eggs in a med sized bowl.

Use a coffee grinder or nut and seed grinder to make a homemade oat and chia flour. Simply measure ½ a cup of whole oats and 1 tbsp chia seeds into a grinder and grind into until you get a texture of flour.

In a small bowl combine all the dry ingredients together (cinnamon, baking soda, chia, and oat flour). Give a mix before adding the dry mixture to the wet ingredients.

Thoroughly mix all the ingredients together for the banana oat pancakes using a mixing spoon or use an immersion blender to whiz the batter into a smooth texture.

Set aside while you make the homemade blackberry sauce.

In a small pot combine 1 cup fresh or frozen blackberries with 1 tbsp chia seeds and 1 tbsp rice malt syrup.

Place the blackberries over medium heat while stirring and mashing the blackberries into a paste. Once the blackberries have cooked into a sauce set aside while you cook the pancakes. The chia seeds will help to thicken the blackberry sauce as it sits.

To cook the banana and oat pancakes lightly grease a frying pan with 1 tsp butter or coconut oil.

Measure out the pancake batter into a heated frying pan using a measuring cup or large spoon to form round pancakes.

After cooking one side of the pancake for approximately 1 to 1.5 minutes flip the pancake over with a spatula to cook the other side until golden brown.

Serve these delicious homemade banana and oat pancakes with the homemade blackberry sauce on top!

  • frying pan

Ingredients
  

  • 1 medium banana
  • ½ cup oats
  • 1 tbsp chia seeds
  • 2 eggs
  • ½ tsp baking powder
  • dash of cinnamon
  • 1 tsp coconut oil for frying

Instructions
 

  • Grind chia seeds and oats into a flour using a coffee grinder or nut and seed grinder.
  • Combine dry ingredients into a mixing bowl (ground oats, chia seeds, baking soda, cinnamon.
  • Mash banana with cracked eggs.
  • Combine wet ingredients with dry ingredients and mix together using an immersion blender.
  • Add 1 tsp coconut oil to frying pan and melt on medium heat. Use a spoon or measuring cup to from pancakes in frying pan. Cook the banana oat pancakes on each side for 90 seconds or until golden brown.

Notes

Serve the banana oat pancakes with a homemade blackberry sauce and greek yogurt or toppings of your choice.
