This carrot cake smoothie recipe is healthy, vegan, sugar-free, and so yummy. If you want a 5-minute carrot cake smoothie that is way healthier than carrot cake, then you are in for a treat!

Lately, I have been getting into smoothies as they are quick, easy, and healthy, exactly what moms with toddlers and newborns need. I am recently a new mom navigating limited time to spend on cooking. Since eating healthy is a must for me, I am all about the easy smoothie recipes and anything that can be pre-prepped to make my life easier when looking after a newborn.

While I have loved my simple smoothie recipe, I wanted to add vegetables to some of my smoothies to increase my vegetable intake. Carrots are a healthy, budget-friendly vegetable and a staple in my fridge. I set out to make the best carrot cake smoothie recipe to enjoy as a nutritious treat.

This healthy carrot cake smoothie recipe is vegan, refreshing, and has an ultra-creamy texture. It is naturally sweetened with dates and spiced with cinnamon and vanilla extract. I used walnuts and almond milk to make a decadent creamy vegan carrot cake smoothie that is like dessert in a cup. Except this healthy carrot smoothie is good for you!

Nutrition benefits of this carrot smoothie recipe

Dates are a staple in my cupboards and perfect for use as a natural sweetener instead of sugar. I use dates in these chocolate energy balls in this simple smoothie recipe and this sugar-free sprouted buckwheat granola.

Walnuts make this carrot cake smoothie perfectly creamy, filling, and nutritious. Adding walnuts to smoothies is a great way to get the anti-inflammatory omega-3 fats which are excellent for weight loss and brain health!

Cinnamon is a warming spice with powerful antioxidant and anti-inflammatory properties. Cinnamon has even been proven to lower blood sugar in higher doses and is the perfect spice for type 2 diabetes and people with insulin resistance.

The hints of cinnamon combined with vanilla extract, carrots, and almond milk are the perfect combo for a delicious vegan carrot cake smoothie.

Carrots are a standard vegetable, yet their healing properties should not be overlooked. The carotenoids found in carrots are a potent phytonutrient, and they are a great liver cleansing vegetable.

Writing this post reminds me of how much I love carrots. As a child, I ate so many carrots that the tip of my nose turned slightly orange. I remember being so excited when my mom came home with groceries and a big bag of carrots! (Yup, we did not have a lot of junk food)

While I do not eat enough carrots to turn my nose orange, I do still love them. And who doesn’t love carrots when you can turn them into a carrot cake smoothie!

Smoothies are also the perfect baby food, so I’m sure I will be giving this smoothie as a healthy treat to my baby girl once she can eat.

Equipment

  • Blender
  • Cutting board and knife

Ingredients
  

  • 1½ cups carrot
  • 1 cup almond milk
  • ¼ tsp cinnamon
  • 4 dates
  • 4 walnuts
  • 2 ice cubes

Instructions
 

  • Chop the carrots into 1 cm rounds then place inthe blender. Add the rest of the ingredients then blend on high for 30 seconds.

Notes

I recommend using a high-speed blender such as the Vitamix and blend until silky smooth.
