These Smoked salmon tacos are so tasty, healthy and the perfect summer salmon taco to enjoy at BBQs. This smoked salmon taco recipe is made using Patagonia provisions wild-caught smoked salmon, which add a delicious smoky flavor.
While nothing beats Baja tacos, these Mexican salmon tacos are right up there in my books. The smoked salmon tacos are made in a corn tortilla on a bed of spinach, layered with avocado, and a black bean and corn salsa topped with homemade chipotle mayo. These smoked salmon fish tacos are seriously so yummy, easy to prepare, healthy, and satisfying.
Smoked Salmon Tacos Recipe with Black Bean and Corn Salsa
This recipe is for four salmon tacos, but there will be enough salsa to make plenty more. Start by preparing the black bean and corn salsa in a medium-size bowl. Make the Homemade Chipotle Mayo in another smaller bowl and set both aside.
Black Bean and Corn Salsa
2 diced tomatoes
1 medium diced red pepper
3 tbsp finely diced white onion
1 cup fresh or frozen (and thawed) corn
1 cup black beans
1/4 cup finely diced cilantro
1/2 tsp cumin powder
1/2 of a lime freshly squeezed
Himalayan Salt and cracked pepper to taste
Chipotle Yogurt Mayo
3 tbsp mayonnaise
3 tbsp full-fat Greek yogurt
1 tsp chipotle in adobe sauce
*Mix all together and set aside
How to make smoked salmon tacos
*Start by warming up four corn tortilla’s in a pan, then set on a plate to prepare.
*Lay down a couple of leaves of spinach, a little shredded red cabbage, then layer with slices from half an avocado divided into each tortilla.
*place a couple of spoonfuls of salsa onto each.
*Open up a package of Patagonia Provision’s smoked wild salmon and divide evenly into each taco, then top with the chipotle mayo.

Smoked Salmon Tacos

Ingredients
- 4 corn tortillas
- 1 package smoked salmon
- ¼ cup shredded cabbage
- 12 spinach leaves
- 8 tbsp black bean and corn salsa
- 4 tsp chipotle mayo
- 1 wedge lime
Instructions
- Pre-prep for this smoked salmon taco recipe by making the black bean and corn salsa and homemade chipotle mayo.
- Slice half and avocado and 1/4 cup cabbage.
- Heat 4 corn tortillas in a pan or open flame on the stove till lightly browned.
- Layer each corn tortilla with 3 spinach leaves, cabbage, 2 tbsp black bean and corn salsa.
