Black Bean and Corn Salsa

This black bean and corn salsa is delicious, nutrient-dense, and the perfect healthy Mexican snack to have on hand. Enjoy the black bean salsa with some fresh corn tortilla chips or mix it with some quinoa and feta cheese for a Mexican-style quinoa salad.

I also use this healthy black bean and corn salsa for tacos and as a base filler for these smoked salmon tacos, mmm so good! This black bean salsa with cumin and cilantro are also great to use in gluten-free Mexican burrito bowls. Add some cooked rice, grated cheese, lettuce, and a side of avocado! 

Black Bean and Corn Salsa Ingredients

2 diced tomatoes
1 medium diced red pepper
​3 tbsp finely diced white onion
​1 cup fresh or frozen (and thawed) corn
1 cup black beans
​1/4 cup finely diced cilantro
​1/2 tsp cumin powder
​1/2 of a lime freshly squeezed 
​Himalayan Salt and cracked pepper to taste

How to make black bean and corn salsa

It is super easy to make this healthy mexican salsa. Dice the tomatoes, red pepper, white onion, and cilantro and mix in a mixing bowl with the cumin, fresh lime.  

Strain and rinse 1 cup of black beans from a can and add to the salsa. Lightly steam 1 cup of frozen corn until thawed, then add to the bowl with the freshly chopped vegetables.

Mix all the ingredients and enjoy with some tortilla chips or these super yummy smoked salmon tacos!

Benefits of this homemade salsa

​Cilantro is an excellent culinary herb for helping the body detox heavy metals and cleanses the liver.

Black beans are great for weight loss and gut health. The high fiber content provides satiety and is a great plant-based legume to reverse insulin resistance.

Beans are also an excellent source of plant-based protein. The various starches and fibers in beans fuel the microbiome in the colon for optimal gut health.

This homemade mexican salsa is packed full of healthy carbohydrates that are fantastic for weight loss.

Ingredients
  

  • 2 tomatoes
  • 1 red pepper
  • 3 tbsp white onion
  • 1 cup frozen, fresh or canned corn
  • 1 cup cooked or canned blackbeans
  • ¼ cup cilantro
  • ½ tsp cumin powder
  • ½ lime

Instructions
 

  • In a large mixing bowl combine finely diced white onion and cilantro with diced tomato and red pepper.
  • Add cooked black beans and corn.
  • Season with cumin powder, fresh lime juice and salt and pepper to taste.

You can use canned corn and canned black beans in this salsa for an easy homemade mexican salsa. To make salsa healthier and more budget friendly you can cook the black beans from scratch in a pressure cooker.

Frozen corn can also be used in this recipe. Just lightly cook the corn in a frying pan for 5 minutes.
