Homemade Black Bean and Corn Salsa
1 medium diced red pepper
3 tbsp finely diced white onion
1 cup fresh or frozen (and thawed) corn
1 cup black beans
1/4 cup finely diced cilantro
1/2 tsp cumin powder
1/2 of a lime freshly squeezed
Himalayan Salt and cracked pepper to taste
How to make black bean and corn salsa
It is super easy to make this black bean and corn salsa recipe. Simply dice the tomatoes, red pepper, white onion and cilantro and mix together in a mixing bowl with the cumin, fresh lime.
Strain and rinse 1 cup of black beans from a can and add to the salsa. Lightly steam 1 cup of frozen corn until thawed then add to the bowl with the rest of the ingredients for a delicious Mexican style, fresh black bean and corn salsa. Mix all the ingredients together and enjoy this homemade Mexican salsa with some tortilla chips or however you choose to use this homemade black bean and corn salsa!
