The homemade veggie burgers are made from a base of onion, mushroom, quinoa, carrots, roasted almonds and sunflower seeds, oats and flavored with parsley, tamari and mexican spices.
While this veggie bean burger recipe take a little prep, the recipe makes a fairly large batch that freeze well for quick and easy follow up dinner or lunches. These nutrient dense black bean and quinoa burgers have been a staple in my life for years now and I still love them. Its easy to utilize the same base and swap up the spices for savory homemade veggie burger patties, such as rosemary, basil and oregano, either way this if my favorite veggie burger recipe that I have perfected. I still have not found another recipe that beats these homemade veggie burgers. I hope you enjoy them as much as I do!
Black Bean and Quinoa Burgers
1 large onion
3 cloves garlic
2 cups mushrooms
1 cup grated carrot
1 cup roasted almonds
1 cup roasted sunflower seeds
2 cups cooked black beans
2 cups cooked quinoa
2 cups oats
1 cup gluten free flour (or 1 cup fresh ground oat flour)
1 cup fresh chopped parsley or cilantro
1/3 cup gluten free tamari
1 tbsp cumin powder
1 1/2 tbsp chilli powder
1 tbsp oregano
1 tbsp butter, coconut oil or ghee to saute vegetables with
How to make homemade veggie burgers
*In a large pan melt butter then add finely diced garlic, diced onion, mushrooms and carrot and let simmer on low until soft and slightly browned.
*In a separate pan lightly toast raw almonds and sunflower seeds, set aside to cool then grind in a clean coffee grinder or food processor
*In another large bowl combine slightly mashed black beans with the cooked quinoa, oats, flour, parsley, tamari, spices and ground almonds and sunflower seeds.
*Mix ingredients together with your hands then individually form into patties. You can always add in some extra flour and or an egg to help bind ingredients to make these homemade veggie burger patties.
*Fry up in a pan over medium heat with coconut oil and serve with baked sweet potato and sauteed asparagus and broccoli in butter with rock salt and cracked pepper. Or enjoy with your favorite bun or lettuce wrap. I love to have them with this chipotle mayo dip on the side.
Freeze any extra homemade veggie burgers patties uncooked and pull them out as needed for future meals.
