Initially, I was blending almonds with water and apple cider vinegar, but I found that it was too runny and zesty and would often separate in the fridge, so I would still add a touch of olive oil for that creamy consistency. But then, for the first time, I made this vegan ranch dressing by Plantiful Kiki, where she blended cashews with soy milk to make the most creamy yet oil-free dressing with the texture I was looking for.
While it was a fantastic dressing, I wanted something a bit more zesty but still creamy, and that is when the idea and ratios came to mind for making this delicious dressing that is inspired by the ingredients in my classic oil-based apple cider vinaigrette and Plantiful Kiki’s vegan ranch dressing.

Oil Free Apple Cider Vinegar Dressing Ingredients:
- 1/3 cup apple cider vinegar
- 1/4 cup raw blanched almonds
- 1/3 cup unsweetened soy milk
- 2 tbsp honey (or maple syrup for a vegan option)
- 1 clove garlic
- 1.5 tbsp Dijon mustard
- 2 tbsp water
- Dash of salt and pepper, to taste
How to Make a Creamy Apple Cider Vinegar Dressing with No Oil:
- Blend the ingredients: In a high-speed blender, combine the raw blanched almonds, garlic, apple cider vinegar, soy milk, honey, Dijon mustard, salt, and pepper. Blend on high until smooth and creamy.
- Adjust consistency: If the dressing is thicker than desired, add more soy milk to thin it out. Blend again until you reach your preferred consistency. The dressing will thicken more once refrigerated.
- Taste and season: Taste the dressing and adjust the salt and pepper.

- ⅓ cup blanched almonds
- ⅓ cup soy milk
- ¼ apple cider vinegar (Braggs)
- 1 clove garlic
- 2 tbsp honey
