Kale Apple Cranberry Salad
1/4 cup dried cranberries
1 medium apple diced
1/4 cup sunflower seeds
2 tsp cold pressed olive oil to massage kale
goat cheese to sprinkle
Homemade Honey Dijon Dressing
1 1/2 tbsp raw apple cider vinegar with the mother
1 tbsp dijon mustard
2 tsp honey
sea salt and fresh cracked pepper to taste
To make the homemade honey dijon dressing simply place all ingredients into a mason jar and shake.
How to make massaged kale salad
Wash kale and rip the leaves off the stem into small chunks and place into a large bowl. Pour 2 tsp of olive oil over the kale and massage thoroughly with your hands until the kale is nice and limp. Add in diced apple, cranberries and sunflower seeds then lightly toss with the homemade honey dijon dressing. Serve the massaged kale apple cranberry salad with a little sprinkle of goat cheese sprinkled on top
