Kale Apple Cranberry Salad
- One bunch kale
- 1/4 cup dried cranberries
- One medium apple diced
- 1/4 cup sunflower seeds
- 2 tsp cold-pressed olive oil to massage kale
- 2 tbsp goat cheese to sprinkle
Homemade Honey Dijon Dressing
- 3 tbsp cold-pressed olive oil
- 1 1/2 tbsp raw apple cider vinegar with the mother
- 1 tbsp dijon mustard
- 2 tsp honey
- sea salt and fresh cracked pepper to taste
To make the homemade honey dijon dressing, place all ingredients into a mason jar and shake.

- 1 bunch kale
- ¼ cup cranberries
- 1 apple
- ¼ cup sunflower seeds

- 2 tbsp goat cheese
- Honey Dijon Dressing

- 1.5 tbsp apple cider vinegar
- 1 tbsp dijon mustard
- 2 tsp honey
Instructions
- Wash and de-stem kale then place in a mixing bowl. Pour over tsp olive oil and massage kale with your hands.
- Dice apple and add to kale salad with the cranberries and sunflower seeds then top with crumbled goats feta.
- Measure 3 tbsp olive oil with apple cider vinegar, honey and dijon mustard into a mason jar and shake. Serve over the kale apple cranberry salad.
