Kale Apple Cranberry Salad for Weight Loss with a Honey Dijon Dressing

Kale Apple Cranberry Salad

 

This kale apple cranberry salad for weight loss is made with dried cranberries, apples, and goat cheese topped with a mouth-watering homemade honey dijon dressing. The sweetness from the apples and cranberries complements the honey dijon dressing drizzled over the massaged kale salad. I promise you will love eating this healthy kale salad combined with the natural sweetness of honey, cranberries, and apples.

The honey dijon kale salad is a fantastic salad for weight loss as kale is a liver cleansing nutrient-dense vegetable great for reversing insulin resistance. Apple cider vinegar is great to use in salads dressings for weight loss as it helps prevent fatty liver and obesity. There are so many benefits of consuming apple cider vinegar, especially for diabetes and weight loss.  

Kale Apple Cranberry Salad 

  • One bunch kale
  • 1/4 cup dried cranberries
  • One medium apple diced
  • 1/4 cup sunflower seeds
  • 2 tsp cold-pressed olive oil to massage kale
  • 2 tbsp goat cheese to sprinkle 

Homemade Honey Dijon Dressing

  • 3 tbsp cold-pressed olive oil
  • 1 1/2 tbsp raw apple cider vinegar with the mother
  • 1 tbsp dijon mustard
  • 2 tsp honey
  • sea salt and fresh cracked pepper to taste

 

To make the homemade honey dijon dressing, place all ingredients into a mason jar and shake.

How to make a kale apple cranberry salad

Wash kale, rip the leaves off the stem into small chunks and place them into a large bowl. Pour 2 tsp of olive oil over the kale and massage thoroughly with your hands until the kale is nice and limp. Massaging the kale makes the best kale apple cranberry salad 

Add the diced apple, cranberries, and sunflower seeds, then lightly toss the homemade honey dijon dressing. Serve the massaged kale apple cranberry salad with a little sprinkle of goat cheese sprinkled on top.

Benefits of kale

Kale is low in calories, contains fiber to help you feel satiated, and is an excellent source of vitamins and minerals such as vitamin C, A, K, and folate for the MTHFR gene. Kale is also high in lutein and zeaxanthin, which are very beneficial for the eyes. 

If you need to lose weight or lower blood sugar levels, kale is your best friend as it is nutrient-dense yet low and calories and one of the best foods to lower blood sugar levels. Eating kale is excellent for anyone who has the MTHFR gene mutation and wants to lose weight.

Ingredients
  

  • Kale Apple Cranberry Salad
  • 1 bunch kale
  • ¼ cup cranberries
  • 1 apple
  • ¼ cup sunflower seeds
  • 2 tsp olive oil
  • 2 tbsp goat cheese
  • Honey Dijon Dressing
  • 3 tbsp olive oil
  • 1.5 tbsp apple cider vinegar
  • 1 tbsp dijon mustard
  • 2 tsp honey

Instructions
 

  • Wash and de-stem kale then place in a mixing bowl. Pour over tsp olive oil and massage kale with your hands.
  • Dice apple and add to kale salad with the cranberries and sunflower seeds then top with crumbled goats feta.
  • Measure 3 tbsp olive oil with apple cider vinegar, honey and dijon mustard into a mason jar and shake. Serve over the kale apple cranberry salad.

Notes

Season the honey dijon dressing with a touch of sea salt and cracked pepper to taste!
