This strawberry chia seed pudding is nourishing with both a creamy and fresh strawberry flavor. It combines a smooth, blended strawberry chia base made with soy milk and vanilla, layered with cool yogurt and fresh, chopped strawberries for contrast. The flavor is clean and gently sweet with a natural strawberry brightness that feels fresh rather than heavy, making it ideal for breakfast, a light dessert, or an easy make ahead snack.

What makes this strawberry chia pudding especially satisfying is the balance of textures. Blending the strawberries directly into the chia base creates a silky, spoonable pudding once the chia seeds hydrate, while the yogurt layer adds creaminess, and the fresh strawberries on top bring a juicy bite. This recipe works beautifully as an overnight strawberry chia pudding, but it also sets well after about one hour if you want to enjoy it earlier.
I have been packing this strawberry chia pudding in a small to go container in my little girl’s lunch box for preschool or when we are out of the house, off on an adventure, and she has been loving it. Out of all my chia pudding recipes thus far, this strawberry chia pudding recipe has been her favorite. I always love it when you can find a healthy yet yummy snack that can be packed in lunch boxes and prepped ahead of time.

Strawberry Chia Pudding Recipe
Strawberry Chia Base
2 1/2 cups frozen strawberries, thawed slightly
1/2 cup unsweetened soy milk
1 teaspoon vanilla extract
2 tablespoons maple syrup
1/4 cup chia seeds
For Layering
1 cup fresh strawberries, finely chopped
1 cup plain yogurt of choice
How to Make Strawberry Chia Seed Pudding
- Defrost the frozen strawberries by placing them in a colander or bowl and running hot water over them. Gently strain and press with your hands to remove excess water. Properly thawing the strawberries is key for achieving a smooth blended base.
- Add the partially thawed strawberries, soy milk, vanilla extract, and maple syrup to a blender. Blend until completely smooth.
- Pour the blended strawberry mixture into a bowl or large jar.
- Stir in the chia seeds very well so they are evenly distributed.
- Let the mixture sit for 5 minutes, then stir again to prevent clumping. Stir once more at the 10 minute mark, then cover and refrigerate for at least 1 hour or overnight for a thicker strawberry chia pudding.
- Divide the strawberry chia pudding evenly into three jars or serving glasses.
- Add a layer of yogurt on top of the chia pudding, then finish with fresh chopped strawberries.
Tips and Substitutions
This strawberry chia seed pudding thickens more as it sits and becomes extra creamy after chilling overnight.
Using soy milk creates a richer and creamier strawberry chia base, but almond milk, oat milk, or even water can be used for a lighter, more fruit forward flavor.
Plain yogurt adds a tangy contrast that balances the sweetness of the strawberries. For a sweeter version, you can use vanilla yogurt, a plant based yogurt, or skip the yogurt layer entirely.
Fresh chopped strawberries on top add texture and brightness. For extra crunch, sprinkle granola, such as homemade oil free granola, right before serving.
This strawberry chia pudding keeps well in the fridge for up to 2 to 3 days when stored in an airtight glass container. I like to store the chia base separately and assemble it just before serving for the best texture.
