Homemade roasted red pepper hummus - How to make roasted red pepper hummus

 

This roasted red pepper hummus recipe is healthy, vegan, and gluten-free. It is the perfect afternoon snack or addition to lunch boxes. If your looking for healthy snack ideas for weight loss, this roasted red pepper hummus recipe is one of my favorite healthy snacks to make ahead.

The homemade roasted red pepper hummus is made with roasted red pepper, cauliflower, and garlic resulting in a delicious savory hummus. Lemon and tahini bring out the classic hummus taste. The addition of Himalayan salt to bring all the flavors together.

Homemade Roasted Red Pepper Hummus Recipe

1/2 cup fresh lemon juice
4 cups cooked chickpeas
1/2 cup cold-pressed olive oil
1/2 cup tahini paste4 garlic cloves roasted
1 red pepper roasted
1/2 head cauliflower roasted
1 tsp Himalayan salt (or to taste)
2 tbsp cold-pressed olive oil, salt, and pepper for roasting vegetables

How to make roasted red pepper hummus

Cut up cauliflower, red pepper into med chunks and place on a baking tray with garlic cloves, then drizzle with olive oil generously. Use your hands to get the oil all over the vegetables, then season with salt and cracked pepper.

Place the tray in the oven and roast for 30 mins @ 400 degrees Fahrenheit are until red pepper starts to blacken along the edges. Roasting the vegetables longer will result in a more savory and bold flavor.

Measure all the ingredients into a large bowl with the roasted vegetables, then use an immersion blender to blend well. Alternatively, you can use a food processor as well, but I love my immersion blender! Add extra salt to your taste buds, and enjoy!

This roasted red pepper hummus recipe does make a large batch (approx 1 liter), so be sure to use up or freeze any extras for a later date. I like to store my hummus in small wide-mouth mason jars that I can then pull out of the freezer or fridge to have healthy snacks at home or healthy snacks for work.

My favorite healthy way to enjoy this homemade roasted red pepper hummus is with some freshly chopped cucumber, carrot, celery, and red pepper to dip into the roasted red pepper hummus.

Getting in vegetables that include the colors of the rainbow and all the micro-nutrients found in vegetables are the best foods to cleanse the liver. This homemade hummus contains healthy fats from the cold-pressed olive oil and tahini, which helps to provide satiety.

Commercial hummus often contains refined vegetable oils such as canola oil which are unhealthy fats that you do not want to consume. Making homemade roasted red pepper hummus with cold-pressed olive oil is a great way to ensure that you are getting healthy fats into your diet.

Chickpeas are high in plant-based protein and fibre. Eating fibre is great for both gut health and weight loss. The fibre slows down the absorption of glucose into the bloodstream and provides satiety with zero calories.

  • baking tray and baking paper
  • Immersion blender or food processor

Ingredients
  

  • 4 cups cooked chickpeas
  • ½ cup cold-pressed olive oil
  • ½ cup tahini
  • ½ cup fresh lemon juice
  • 4 cloves garlic
  • 1 red pepper
  • ½ head cauliflower
  • 1 tsp himalayan salt
  • 2 tbsp olive oil

Instructions
 

  • Chop cauliflower and red pepper into large chunks. Place on a baking tray with 4 garlic cloves and season with 2 tbsp olive oil and salt and pepper. Bake for 30 mins @ 400° F.
  • Measure all the ingredients into a food processor and blend until smooth and creamy.
