Oatmeal Protein Pancakes Ingredients
- 2 cups rolled oats
- 2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon

- 2 large eggs
- 1 cup unsweetened soy milk
- 1/2 cup water
- Olive oil spray or a small amount of oil for cooking
How To Make Oatmeal Pancakes
- Add the rolled oats to a high-speed blender, such as a Vitamix, and blend until they resemble a fine oat flour.
- Transfer the oat flour to a large mixing bowl and whisk together with the baking powder, cinnamon, and protein powder.
- Add the eggs, soy milk, and water to the blender and blend until smooth.
- Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined. Let the batter rest for 2–3 minutes to thicken slightly.
- Heat a large non-stick frying pan over medium heat and lightly coat it with olive oil spray or a small amount of oil.
- Scoop about 1/4 cup of batter onto the hot pan for each pancake.
- Cook for 2–3 minutes, or until bubbles begin to form on the surface and the edges look set.
- Carefully flip and cook for another 1–2 minutes, or until golden brown and cooked through.
- Repeat with the remaining batter, adding more oil as needed.
