Gluten Free Banana Walnut Bread Recipe by Amber's Natural Nutrition

This gluten-free banana walnut bread is made using gluten-free oats and coconut ground into flour. The addition of yogurt and butter makes a perfectly moist banana walnut bread that is so damn delicious!

The healthy banana walnut bread is naturally sweetened with whole ripe bananas and contains a small amount of additional coconut sugar. To make this banana bread with walnuts even healthier, you can skip the coconut sugar for sugar-free banana bread that is low-carb.  

Walnuts add the perfect crunch and provide additional nutritional benefits such as anti-inflammatory omega 3 fats.

Gluten-Free Banana Walnut Bread

2 large free-range eggs
1/2 cup butter
1/4 cup coconut sugar
​1 cup very ripe bananas (3 med bananas)
1 tsp vanilla extract
​1 cup oat flour or ground oats
1 cup coconut flour or ground shredded coconut
1 tsp baking powder
1/2 tsp baking soda
1/2 cup plain greek yogurt
1 cup chopped walnuts

How to make banana bread

​Melt butter and combine with the wet ingredients mixing well.

​Combine all the dry ingredients in a large bowl, then mix with the wet ingredients.

​Pour batter into a lightly greased baking pan. 

​Bake at 350 degrees F for 40 mins – 1 hour.

Because this healthy banana bread is moist it is best to bake it @350 or lower for an hour. This will help to ensure that the inside cooks all the way through without burning the crust.

If you like a loaf of drier banana bread you can add 1/2 cup of ground oat flour. But I must say a moist buttery banana bread is so tasty!

Nutrition Tip ~ Many sweet treats are full of highly processed refined flours that are nutrient deficient and easily disrupt blood sugar balance.

By grinding your flours in a coffee grinder or high-speed blender such as the Vitamix, you can enjoy your sweet treats with healthy flours such as the oat and coconut flour in this gluten-free banana walnut bread.

This moist banana walnut bread is gluten free and healthy. Oat and coconut flour is used to make a healthy banana bread that does not contain highly processed flours. The addition of yogurt, butter and eggs mixed with ripe bananas make best moist banana bread ever!

Equipment

  • Loaf Pan
  • 2 mixing bowls

Ingredients
  

  • 2 eggs
  • ½ cup butter
  • ¼ cup coconut sugar
  • 1 cup ripe bananas mashed
  • 1 tsp vanilla extract
  • 1 cup oat flour
  • 1 cup coconut flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ cup plain greek yogurt
  • 1 cup chopped walnuts

Instructions
 

  • Melt butter in a pot then combine in a mixing bowl with eggs, mashed banana, yogurt, coconut sugar and vanilla extract. Use a whisk or fork to mix all the ingedients together.
  • In a separate mixing bowl comine the coconut flour, oat flour, baking powder, baking soda and chopped walnuts. Stir with a spoon before adding to the wet ingredients and mixing again.
  • Grease a loaf baking pan and pour the raw banana bread mixture into the loaf pan.
  • Bake at @350 degrees farenheight for 1 hour.

Notes

Check the banana bread at the 45 – 50 min mark to see how well it is cooking. It may be finished cooking after 45 minutes or still need more time. Insert a clean butter knife into the middle, the butter knife should come out free of wet dough once it is cooked.
