This greek quinoa salad with a balsamic dressing is the perfect refreshing and light lunchtime salad. The gluten-free greek quinoa salad with feta is topped with nutritious hemp seeds and served with the best creamy balsamic dressing for quinoa salad.

The healthy Mediterranean quinoa salad is great for meal prepping ahead of time for a healthy lunch. This salad also complements BBQ food such as chicken skewers. 

I love putting quinoa into the greek salad as it combines well and tastes so yummy. Plus, quinoa is an excellent source of plant protein and is gluten-free!

Anyone looking for a gluten-free quinoa salad has to try making this easy and delicious greek quinoa salad. It is seriously one of my favorite salads!

Adding hemp seeds provides a nutty crunch and an excellent source of plant-based protein. Hemp seeds are one of my favorite superfoods, especially for their high protein and essential fatty acids content. Putting hemp seeds in salads is one of the easiest ways to use hemp seeds and adds a nutritional boost to salads. 

Greek Quinoa Salad with a Balsamic Dressing

  • 1/2 cup quinoa
  • 1 cup water

 

  • Two Lebanese cucumbers diced
  • Two red peppers
  • Three tomatoes
  • 1/4 cup hemp seeds
  • 1/2 cup kalamata olives
  • 3/4 cup feta cheese
  • 1 tsp oregano
  • sea salt and fresh pepper to taste

How to make the greek quinoa salad with a balsamic dressing

Place quinoa in a small pot with the water and bring to a boil, then turn to low heat to cook for 15 mins, then set aside to cool

In a large bowl, chop all the vegetables and sliced olives, then mix with the hemp seeds, feta, and oregano

Once the quinoa has cooled, combine all the ingredients for the greek quinoa salad with the quinoa, then drizzle the homemade creamy balsamic dressing over the top when ready to eat the greek salad.

I love this gluten-free greek quinoa salad with feta without the dressing, so if you are time-poor and looking for a simple greek quinoa salad, skip the dressing. But the extra effort to make the homemade creamy balsamic dressing is worth it for a delicious creamy greek salad.

Creamy Balsamic Dressing for Quinoa Salad

  • .4 tbsp cold pressed olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp dijon mustard
  • 4 tbsp whole fat greek yogurt
  • 1 tbsp water
  • 1 tbsp coconut sugar
  • One clove garlic
  • sea salt and cracked pepper to taste

To make the homemade creamy balsamic dressing, place all the ingredients in a large mason jar and blend with an immersion blender. You could also use a regular blender if you do not have an immersion blender.

Equipment

  • 1 medium salad bowl
  • 1 mason jar
  • 1 immersion blender
  • 1 pot

Ingredients
  

  • ½ cup quinoa
  • 1 cup water
  • 2 lebanese cucumbers
  • 2 red peppers
  • 3 tomatoes
  • ¼ cup hemp seeds
  • ½ cup kalmata olives
  • ¾ cup feta cheese
  • 1 tsp oregano
  • Creamy Balsamic Dressing
  • 4 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp dijon mustard
  • 4 tbsp greek yogurt
  • 1 tbsp water
  • 1 tbsp coconut sugar
  • 1 clove garlic

Instructions
 

  • Place one cup water with half a cup of quinoa in a pot and bring to a boil then simmer on low for 15 minutes.
  • Chop the cucumbers, tomatoes, redpepper and kalmata olives and place in a bowl with crumbled feta, hemp seeds and oregano.
  • Place all ingredients for the balsamic dressing in a mason jar then blend using an immersion blender.
  • Add cooled quinoa to the chopped vegetables then serve with the balsamic dressing.
