Love your liver with this delicious and creamy beet soup recipe. Beets are one of my favourite super foods for liver detox as beets help to thin out bile and get it flowing, thus improving fat digestion, liver detox and promotes regular bowel movement as bile stimulates peristalsis and helps with the elimination of toxins in which the liver dumps into the bile. This healthy beet soup is one of the ways in which I enjoy getting this amazing vegetable into my diet. The cabbage, beet and carrot soup is one of the best liver detox soups.
Creamy Coconut Beet Soup
6 cups water or bone broth stock
3 tbsp apple cider vinegar
2 cups cubed beets
2 cups cabbage thinly sliced
2 cups diced carrots
¾ cup fresh chopped dill or 2 tbsp dry
1 potato
1 onion diced
1 garlic cloves finely diced
2 tbsp ghee
1 can BPA free coconut cream
1 tsp brown rice miso paste (optional)
Sea salt and cracked pepper to taste
3 tbsp apple cider vinegar
2 cups cubed beets
2 cups cabbage thinly sliced
2 cups diced carrots
¾ cup fresh chopped dill or 2 tbsp dry
1 potato
1 onion diced
1 garlic cloves finely diced
2 tbsp ghee
1 can BPA free coconut cream
1 tsp brown rice miso paste (optional)
Sea salt and cracked pepper to taste
*Saute garlic, onion and cabbage with butter in pan until softened
*Place quartered and washed beets, carrots and potato in water or stock and bring to a boil then let simmer until soft
*Combine all remaining ingredients to soup pot and blend together with a immersion blender then let simmer on low for another 15 mins
I often use a little bit of miso paste in my soups for extra flavour instead of using commercial cubed stocks but this is optional
Can you use a sweet potato in place of white potato?
