Equipment

  • 1 High speed blender
  • 1 pot
  • 1 Chopping board

Ingredients

  • 2 cups chopped strawberries
  • 2 tbsp lemon juice
  • 2.5 tbsp chia seeds
  • ½ tsp vanilla extract
  • 3 tbsp maple syrup

Instructions

  • Chop strawberries into small chunks. Measure all ingredients and place into a high speed blender such as the vitamix. Blend on low using the tamper to press the strawberries down if needed. Blend into a smooth texture.
  • Transfer the blended ingredients into a pot and bring to a boil then turn down to a simmer. Let all the ingredietns simmer for 10 minutes then turn off the heat. Let the jam cool down before transferring it into mason jars to store in the fridge.

Notes

For a thicker textured jam you can boil the strawberry sauce for longer to boil out more liquids. You can also add a touch more chia seeds. The jam is still a bit runny especially when warm but it thickens up when it is stored in the fridge and set for 2o minutes to allow the chia seeds to absorb the excess liquid.
