Baby Banana Bread with Sweet Potato
This refined sugar free banana bread with sweet potato is great for baby led weaning and serves as a nutritious breakfast or snack. It is made with whole food ingredients and naturally sweetened with a homemade date puree.
1 Loaf Pan
1 Mixing bowl
1 High speed blender
Boil the sweet potato for 15 minutes. While the sweet potatoes are cooking make the homemade date syrup.
Combine all the dry ingredients into a bowl and mix.
Place 1 cup of ripe bananas or three bananas in a high speed blender with the eggs and cooked sweet potato and blend into a puree. Add to the mixing bowl with the homemade date syrup and mix into a batter.
Line a loaf pan with baking paper then pour in the banana bread batter. Place into a pre heated oven at 170° celcius and bake for 30 minutes.
