Black Eyed Bean Burgers

These black eyed bean burgers are formulated for people on an MTHFR diet who want to lose weight and improve gut health. The black eyed bean patties with mushrooms are savory and taste delicious on their own or topped with your favorite veggie burger toppings.

  • 1 cup green onion
  • 4 cups button mushrooms
  • 4 cups cooked or canned black eyed beans
  • 2 cups sunflower seeds
  • 1 cup rolled oats
  • 1 cup oat flour
  • 1 tbsp tarragon
  • 1 tbsp sage
  • cup tamari
  • 1 tbsp olive oil


  • Dice green onion and mushroom then saute in a pan with olive oil for 20 minutes.
  • Roast sunflower seeds in a dry pan over medium heat for 10 minutes, stirring frequently.
  • Mash 4 cups of cooked or canned black eyed beans using your hands in a large mixing bowl.
  • Grind 1 cup of oats into a flour in a high speed blender or food processor. Add to the mixing bowl.
  • Grind toasted sunflower seeds in a high speed blender then add to the main mixing bowl.
  • Combine all ingredients into the mixing bowl then mush together using your hands. Form into burger patties.


Cook the black eyed bean burgers in a pan with some olive oil until golden brown on each side. This recipe yields approximately 16  burgers so freeze any uncooked black eyed bean patties to use at a later date.
