Beet and Artichoke Salad for the Gallbladder

- 2 cups spinach
- 1 tbsp hemp seeds
- ½ cup roasted beets (or pre-cooked store bought beets)
- 2 tbsp canned artichoke
- 1 tsp feta
- 1 tsp cold-pressed olive oil
- ½ tsp gluten-free tamari
- ½ tsp coconut sugar
- ½ tsp apple cider vinegar
Place spinach in a salad bowl and top with diced roasted beets and canned artichoke. Sprinkle hemp seeds and feta on top.
Make the homemade vinaigrette by combining olive oil, apple cider vinegar, tamari and coconut sugar in a saucer. Give a stir then pour on top of the roasted beet salad.
