This apple pie chia pudding is like a healthy dessert in a cup. The chia pudding is topped with a cinnamon spiced homemade apple sauce.

  • In a large mason jar combine chia seeds with almond milk and whisk the chia seeds until evenly dispersed. Allow chia seeds to sit for 20 minutes to absorb the almond milk.
  • Peel, core and slice 4 green apples.
  • Place apples, water, cinnamon, honey and vanilla extract into a pot. Bring to a boil then let the apples simmer for 30 minutes. Mash the apples with a fork after cooking.
  • Evenly divide the chia pudding into 4 cups and top each cup with the homemade applesauce

Notes

Serve this apple pie chia pudding hot or cold! You can also store in glass jars to have as a snack on the go. Enjoy!
