This homemade roasted red pepper hummus is the perfect afternoon snack or addition to lunch boxes. If your looking for healthy snacks to make at home or healthy snacks to make for work this roasted red pepper hummus recipe is one of my favorite healthy snacks to make ahead.
The homemade hummus is made with roasted red pepper, cauliflower and garlic which give the hummus a mild yet savory flavor that will leave you wanting more. The lemon and tahini bring out the classic hummus taste with the addition of himalayan salt to bring all the flavors together for a yummy homemade roasted red pepper hummus.
Homemade Roasted Red Pepper Hummus Recipe
4 cups cooked chickpeas
1/2 cup cold pressed olive oil
1/2 cup tahini paste
4 garlic cloves roasted
1 red pepper roasted
1/2 head cauliflower roasted
1 tsp himalayan salt (or to taste)
cold pressed olive oil, salt and pepper for roasting vegetables
How to make roasted red pepper hummus
*cut up cauliflower, red pepper into med chunks and place on a baking tray with garlic cloves then drizzle with olive oil generously. Use your hands to get the oil all over the vegetables then season with salt and cracked pepper. Place the tray in the oven and roast for 30 mins @ 400 degrees fahrenheit are until red pepper starts to blacken along the edges. Roasting the vegetables longer will result in a more savory and bold flavor.
*Measure all the ingredients into a large bowl with the roasted vegetables then use a immersion blender to blend well. Alternatively you can use a food processor as well but I love my immersion blender! Add extra salt to your taste buds and enjoy!
*This recipe does make a large batch (approx 1 liter) so be sure to use up or freeze any extras for a later date. I personally like to store my hummus in small wide mouth mason jars that I can then pull out of the freezer or fridge to have healthy snacks at home or healthy snacks for work.
